Apple Chicken Stir Fry

1 lb. chicken breast, boneless, skinless, small cubes

1 T. olive oil

1 3/4 c. carrots, thinly sliced (3-4 medium carrots)

1/2 c. onion, red, sliced

1 t. basil, dried

1/4 t. garlic powder

1/4 t. black pepper

1 t. olive oil

1 c. pea pods, fresh or frozen

1 T. water

1 apple, red, cored, thinly sliced

2 c. brown rice, cooked


Stir fry cubed chicken in 1 T. of oil in non-stick skillet on medium-high until browned and cooked.  Add carrots, onion, basil, garlic powder, black pepper and 1 t oil.  Cook until carrots are slightly tender.  Add pea pods, 1 T. water, reduce heat to medium-low and cover with a lid.  Cook for 2 minutes.  Remove from heat and stir in apple.  Serve over brown rice.

Makes 7-1 c. servings.
