1 1/2 lbs. chicken breast
1 c. cornflake crumbs
1 t. paprika
1/2 t. Italian herb seasoning
1/4 t. garlic powder
1/4 t. onion powder

Remove skin from chicken and cut meat off of bone in to bite-sized pieces. Place cornflakes in a plastic bag and crush very fine by using a rolling pin. Add remaining ingredients to crushed cornflakes. Close bag tightly and shake until blended. Add a few chicken pieces at a time to crumb mixture. Shake to coat evenly. Preheat oven to 400 degrees. Lightly spray a baking sheet with cooking spray. Place chicken pieces on baking sheet so they are not touching. Bake until golden brown, about 12 to 14 minutes.
