Baked Fish and Chips

2 baking potatoes, large

1/4 c. Zesty Italian dressing, fat free

1 lb. white fish filets (tilapia, halibut, or cod)

1/4 c. salad dressing, fat free

cooking spray


Coating Mix:

2 c. cornflakes

1 t. Italian seasoning

1 T. chicken seasoning

1/2 c. whole wheat flour

1/2 c. all purpose flour


Preheat the oven to 400 degrees.  Cut potato lengthwise into 8 wedges.  Toss potatoes with Italian dressing in a bowl.  Arrange, cut side down, on large baking sheet sprayed with cooking spray.  Bake 15 minutes. Mix coating ingredients, remove and set aside 4 T. of mix. Spread one side of fish fillets with half of the salad dressing.  Dip fish in coating mix. Repeat with other side of fish.  Remove potatoes from oven; turn over and arrange around outer edges of baking sheets. Place fish in center of baking sheets.   Sprinkle reserved 2 T. coating mix over potatoes.  Bake 15 minutes or until the fish flakes with a fork and potatoes are tender.
