egg substitute equivalent to 2 eggs
Lightly spray a nonstick skillet with cooking spray and place over medium heat. In a small bowl, combine remaining ingredients, beat and pour mixture into skillet. Let cook on medium heat for 45 seconds until it begins to set. Lift up edge and let egg run under cooked part. When it begins to set, fold one side over the other. When cooked thoroughly with no wetness, remove and serve immediately.
**To make these variations, prep extra ingredients first before preparing the basic omelet.**
Herb-Parmesan Omelet: Cook omelet as directed in steps 1-4. Add 1 t. chopped dill, 1 t. basil, 1 t. parsley and 1 T. grated Parmesan cheeses. Cook as directed in step 5.
Ham and Cheese Omelet: Cook omelet as directed as above in steps 1-4. Before going on to step 5, add 1 oz thinly sliced ham, 1/8 c. chopped tomato, 1/8 c. green onions and 1/8 c. cheddar cheese. Finish omelet with step 5.
