Bean Quesadillas

2 T. refried beans, fat free

1 tortilla, whole wheat

3 T. cheddar cheese, reduced fat, shredded


Spread beans on one side of the tortilla.  Sprinkle cheese on top of beans and fold tortilla in half. Place the quesadilla in the microwave for 20-25 seconds or cook in an electric skillet on medium-high heat for 2 minutes on both sides until cheese is melted.  Cut quesadilla in half and serve.

Makes 2 servings.
