1 can black beans, drained and rinsed
1 bell pepper, red, chopped
1 c. mushrooms, sliced
1 1/2 c. spinach, fresh, chopped
6 tortillas, whole wheat
3/4 c. cheddar cheese, reduced fat, shredded
salsa, optional
avocado, sliced, optional
sour cream, fat free, optional
Heat large saute pan that has been sprayed with non-stick cooking spray. Add black beans, peppers, mushrooms and spinach. Cook for 3-5 minutes. Remove vegetables from pan. Lay a tortilla in the pan and cover one half with 1 tablespoon of cheese. Top wit 1/6 of vegetable mixture. Cover with 1 tablespoon of cheese and fold over. Flip after 2 minutes. Repeat with remaining tortillas.
