Broiled Zucchini

3 T. margarine

1/4 c. green onion, chopped

1 T. Rosemary

1 t. lemon juice

1/2 t. lemon zest

1/4 t. pepper

1/8 t. cayenne pepper

4 zucchini, medium


In a bowl, combine all the ingredients together, except the zucchini; set aside.  Cut the zucchini lengthwise into three slices (12 slices total).  Place on a broiler pan sprayed with non-stick spray. Broil zucchini 4 inches from the heat for 10-12 minutes, turning occasionally.  Spread with rosemary spread and serve.
