1/2 c. bulgur, quick cooking
1 c. water
1 1/2 c. flour
1/2 t. salt
4 t. baking powder
1/3 c. sugar
1 egg, slightly beaten
1/2 c. applesauce
Fruit:
1/2 c. cranberries, dried
3 t. orange juice
OR
1/2 c. blueberries
OR
1/2 c. apples, diced
1/2 t. cinnamon
1/4 t. nutmeg
Preheat the oven to 425F. Combine bulgur and water in a saucepan. Cover and bring to a boil. Reduce heat and simmer until water is absorbed (8-12 minutes). Set aside. Sift flour, salt, baking powder, and sugar. In a separate bowl, combine bulgur, egg and applesauce. Mix bulgur mixture, flour mixture and fruit. Drop 1/4 c. mixture into muffin tin and bake for 12-15 minutes.
