Cheesy Beef Burritos

1/2 lb. ground beef, extra lean

1 can black beans, drained, rinsed (15 oz)

2 t. chili powder

1/2 c. salsa

1/2 c. cheddar cheese, shredded, reduced fat

9 whole wheat tortillas

1/4 c. sour cream, fat free

1 c Romaine lettuce, shredded

1 tomato, chopped


Cook meat in large skillet on medium-high heat for 5 min or until meat is no longer pink. Drain. Add beans, chili powder and salsa.  Cook 5 minutes or until heated through.  Remove from heat and stir in cheese.  Heat tortillas in microwave until warm. Spread meat mixture down the center of each tortilla.  Top with sour cream, lettuce and tomato. Fold in opposite side of tortillas and roll up burrito style.

Makes 9 servings.
