1/2 c. bulgur, uncooked
1 orange, large, peeled and chopped
1/4 c. onion, medium, chopped
1 tomato, small, chopped
3/4 c. parsley, chopped
2 T. lemon juice
2 t. orange peel, grated
2 t. olive oil
1/4 t. pepper
1/8 t. crushed red pepper
Cook bulgur as directed on package, omitting salt. Toss bulgur and remaining ingredients in a bowl. Cover and refrigerate until chilled.
Makes 6-1/2 c. servings.
