2 c. corn, canned, no salt added
1 tomato, medium, seeded and chopped
1/4 c. onion, chopped
1/4 c. cilantro, chopped
2 T. lime juice
1 jalapeno, chopped (optional)
Combine corn, tomato and onion. Mix well. Add cilantro, lime juice and jalapeno. Toss and refrigerate until ready to serve.
