Cornbread Salad

1 pkg. cornbread mix

1 T. sugar

1/2 tomato, chopped

1/2 bell pepper, chopped

1/4 c. onion, chopped

1 c. mayonnaise, light

pepper to taste


Preheat oven to 350F. Prepare cornbread as directed.  After it is cooled, crumble cooked cornbread into a bowl. Add sugar, chopped vegetables and mayonnaise.  Mix well.  Add pepper to taste, chill, covered until serving time.

Makes 6-1/2 c. servings.
