Cooking Spray
1 pkg. oriental flavor ramen noodles, broken into small pieces (reserve seasoning packet)
1/2 c. almonds, slivered
8 c. spinach leaves, torn
1 can mandarin oranges, drained (11 oz)
3 chicken breasts cooked, boneless, skinless, cooled and cubed
1/4 c. onion, red, sliced, separated into rings
Dressing:
2 t. lemon juice
1/4 c. vegetable oil
1/4 c. wine vinegar
1/4 t. seasoned salt
1 seasoning packet from ramen noodles
2 t. sugar
1/2 t. black pepper
1/4 c. Parmesan cheese, grated
Spray ramen noodles and almonds with cooking spray. Toast under broiler for 3-4 minutes, stirring often, just until noodles begin to brown. Remove and cool completely. In large salad bowl, toss spinach leaves, oranges, cubed chicken and onion rings just until mixed. Place dressing ingredients in a bowl and mix well. To serve, stir noodles/almond mixture into salad mixture. Pour dressing evenly over top, and toss gently. Serve immediately.
