1 c. zucchini, cut into 1" cubes
1 tomato, medium, chopped into 1" chunks
1/4 c. bell pepper, yellow, diced
1/8 c. onion, diced
1/2 T. mayonnaise, low fat
pepper to taste
Combine zucchini, tomato, bell pepper and onion in a small sauce pan. Cook on medium-low heat until vegetables are tender, about 20 minutes, stirring occasionally. Remove from stove top and mix in the mayonnaise. Add pepper to taste.
