1/8 c. onion, sliced
1 garlic clove
2 T. parsley
1 can garbanzo beans, rinsed, drained (15 oz)
1/2 c. water
1/4 t. cumin
1/4 t. crushed red pepper
1 t. lime juice
4 pitas, whole wheat
2 c. Romaine lettuce
1 tomato, medium, chopped
1/2 cucumber, medium, sliced and quartered
1 c. carrots, matchstick
1/2 c. ranch dressing, fat free
Place onion, garlic and parsley in a food processor or blender. Process until roughly chopped. Add garbanzo beans, water, cumin, red pepper and lime juice. Process until smooth. Cut each pita in half to form 2 pockets. Spread 2 T. of bean mixture into each pita half. Add romaine, tomato, cucumber and carrots to each pita half. Add 1 T. of ranch dressing to each pita half.
