Sauce:
2 T. balsamic vinaigrette dressing
1/2 T. soy sauce, lower sodium
1/2 t. ginger, dried
Stir Fry:
1 T. olive oil
1/2 lb. pork loin, cut into strips
1 c. broccoli, chopped
1/2 c. carrots, sliced
1/2 c. mushrooms, sliced
Mix sauce ingredients. Add 1/2 T. sauce mixture to pork; toss to coat. Let stand 5 minutes. Stir fry meat mixture and vegetables in oil in nonstick skillet on medium high heat for 4 minutes or until meat is cooked through. Add remaining sauce mixture; simmer 2 minutes. Serve over rice.
