Greek Pizza

1 pkg. active dry yeast

1 t. sugar

1 c. water, warm

1 1/4 c. flour, whole wheat

1 1/4 c. flour

1/2 t. salt

2 T. olive oil

cooking spray

3 c. spinach leaves

1 c. tomato, seeded, chopped

3/4 c. onion, red, sliced

1/4 c. olives, black, sliced

4 oz. feta cheese, reduced fat


Preheat the oven to 450F. In a medium bowl, dissolve yeast and sugar in warm water.  Let stand for 10 minutes.  Stir in flours, salt and oil.  Beat until smooth. Let stand for 5 minutes.  Turn dough onto a lightly floured surface and pat and roll into a rectangle.  Spray a baking sheet with cooking spray.  Transfer crust to the baking sheet.  Spread spinach, tomatoes, onion, olives and feta cheese on pizza crust. Bake for 15-20 minutes or until lightly browned.  *Optional: when cooled, spray lightly with olive oil.*

Makes 12 servings.
