8 egg whites
1/4 c. orange juice
1 T. vanilla
1 t. cinnamon
4 slices whole grain bread
cooking spray
sliced fruit (optional)
Whisk together egg whites, orange juice, vanilla and cinnamon. Dip bread in egg mixture, coating both sides. Lightly spray skillet over medium heat. Place bread slices on hot skillet and pour remaining egg mixture over bread slices. Cook 3-4 minutes on each side or until golden brown. Top with fruit (optional).
