Hot Orange Coffee Cake

1/2 c. brown sugar

1 t. cinnamon, ground

2 T. flour, all-purpose

2 T. margarine, melted

4 c. flour, all-purpose

1 c. sugar

4 t. baking powder

1/2 t. baking soda

1 t. salt

1 c. margarine, melted

1 1/3 c. orange juice

4 T. orange zest

4 eggs, lightly beaten


Preheat oven to 350F.  Lightly spray a 9x13 pan with cooking spray.  In a small bowl, mix the brown sugar, cinnamon, 1 T. flour and 1 T.  melted margarine.  In a large bowl, mix the 4 cups of flour, sugar, baking powder, baking soda, 1/2 c. melted margarine, orange juice, orange zest and eggs.  Stir the melted margarine mixture into the flour mixture until well blended. Transfer to the prepared cake pan.  Sprinkle the brown sugar mixture. Bake 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean.

Makes 20 servings.
