16 oz cottage cheese, low fat
10 oz frozen spinach, thawed, drained well
1 c. mozzarella cheese, skim
2 eggs
2 egg whites
1/2 c. red bell pepper, chopped
1/3 c. Parmesan cheese, grated
1 t. oregano, dried
1 clove garlic, minced
1/2 t. red pepper flakes
cooking spray
Preheat the oven to 350F. Mix all ingredients until well blended. Spray a 12-cup muffin tin with cooking spray. Spoon 1/3 c. mixture into each muffin cup. Evenly divide any mixture that is leftover between the 12 cups. Bake for 30 minutes or until center is set. Let set for 5 minutes.
