loaf:
1 1/2 lb. ground beef, extra lean
1 c. oats, quick cooking
2 eggs, medium
1 can tomato sauce, no salt added (8 oz)
1 onion, small, chopped
1 bell pepper, green, medium, chopped
1/2 t. thyme
1/2 t. garlic powder
1/2 t. celery seed
1/4 t. black pepper
1 t. rosemary
topping:
1 can of tomato sauce, no salt added (8 oz)
2 T. yellow mustard
3 T. brown sugar
Preheat oven to 350F. in a large bowl, combine ground beef, oats, eggs, tomato sauce, onion, peppers and seasonings until well mixed. Form into a loaf and place in a 9x5 inch loaf pan. In a small bowl, mix tomato sauce, mustard and brown sugar, until smooth. Make an indention in top of loaf, then pour 1/2 of topping over meatloaf. Bake 1 hour. Drain fat. Pour reserved topping mixture over loaf. Bake 10 minutes more or until internal temperature is 160F. Remove from oven and let rest 15 minutes for easier slicing.
