Mash'd Taters

2 lbs. potatoes, washed, unpeeled, chopped into 1" pieces

water as needed

3 T. margarine

1/2 c. evaporated milk, fat free, warmed

**Add roasted garlic if desired.**

In a 4 quart saucepan, combine potatoes and enough water to cover; heat to a boil over high heat.  Reduce heat to low; cover and simmer 8-10 minutes or until potatoes are fork tender.  Reserve 1/4 c. of cooking water.  Drain potatoes.   Return potatoes to saucepan.  Mash potatoes with margarine.  Gradually add warm fat free evaporated milk, continuing to mash potatoes until smooth and well blended.  Add reserved water if necessary.  Transfer to a serving dish.

Makes 9-1/2 c. servings.
