Mashed Potato and Beef Bake

1 lb. ground beef or bison, extra lean

1 can of cream of mushroom soup, low sodium, low fat (10 3/4 oz)

1 T. Worcestershire sauce

1 bag vegetables, frozen and thawed (broccoli, cauliflower, carrots) (16 oz)

3 c. mashed potatoes, instant, prepared


Cook beef in skillet until browned; drain.  Mix beef; 1/2 can soup; Worcestershire sauce and vegetables in 2 qt. shallow baking dish. Stir remaining soup into potatoes and spoon over beef mixture.  Bake at 400F for 20 minutes or until hot.

Makes 8-1/2 c. servings.
