cooking spray
1 lb. pork loin, cut into strips
1 can cream of mushroom soup, reduced sodium, reduced fat, (10 3/4 oz)
1/2 c. skim milk
3 T. Italian dressing, zesty, fat free
2 c. peas and carrots, frozen
4 oz mushrooms, sliced
1 1/2 c. brown rice, instant, cooked
1/4 c. Parmesan cheese, grated
Spray nonstick skillet. Heat over medium-high heat. Add meat; cook 4 minutes until browned and no longer pink. In a small bowl mix soup, milk dressing, peas carrots and mushrooms. Add to meat. Reduce heat to medium-low; cook 5 minutes or until heated through. Spoon meat mixture over hot rice; sprinkle with cheese.
