Peanut Hummus

1/2 can garbanzo beans, rinsed, drained

2 T. lemon juice

3 T. peanut butter

dash of black pepper

2 sprigs parsley, finely chopped

1/4 c. jalapeno pepper, seeded, chopped

1/2 garlic clove, finely chopped

1 c. carrot sticks

1 c. celery sticks


In a food processor, puree the garbanzo beans and lemon juice, in batches until smooth. Stir in a little water to then the hummus, if necessary.  Transfer to a large bowl.  Stir in the peanut butter and season with pepper.  In a small bowl, combine the chopped parsley, jalapeno and garlic.  Spoon the hummus into a serving dish and sprinkle the topping on top.  Serve with carrot sticks and celery sticks.
