Pretzel

1 T. yeast

1/2 c. water, warm

1 t. honey

1 1/3 c. flour

1 t. salt

1/4 t. coarse salt (optional)

Preheat oven to 425 F. In a small bowl, add yeast, water, and honey.  Stir ingredients; let the mixture set for 5 minutes.  Mix the flour and salt together in a medium bowl.  If the yeast mixture is now bigger and bubbly add it to the flour/salt mixture.  Stir mixture together, using a spoon.  Finish stirring the mixture with your hands.  Dough is ready when its crumbly/flaky.  Place the dough on a cutting board and knead (10 times)into one big ball.  Pull off one piece about the size of a large gumball.  Roll it into a skinny snake. Twist it into a pretzel shape and place on a baking sheet.  Repeat, making 12 pretzels.  *Optional: lightly spray pretzels with cooking spray and sprinkle 1/4 t. of coarse salt evenly over pretzels.  Bake for 10 minutes.  Let pretzels cool then eat.

Makes 12 pretzels.
