Pumpkin Pie in a Bag

1 graham cracker

1/4 c. milk, skim

1 T. vanilla pudding mix, sugar free, instant

dash cinnamon

dash ginger, ground

2 T. pumpkin, canned

whipped topping (optional)


Place the graham cracker in a small plastic bag.  Seal the bag.  Crush the graham cracker into small crumbs. Pour the crumbs into a small cup.  In a plastic freezer bag, add the milk, instant pudding and spices. Remove the air from the bag and seal it.  Squeeze and knead with hands. Add 2 T. pumpkin.  Mix well. Push contents of the bag to one corner ; snip off the corner and squeeze the contents into the cup on top of the graham cracker. *Optional: top with whipped topping.*

Makes 1 serving.
