Sesame Chicken 

2/3 c. water

3 T. soy sauce, lower sodium

2 t. lemon juice

3 T. cornstarch

1 t. sesame oil

2 t. olive oil

4 chicken breast, boneless and skinless

2 bell pepper, sliced

1 onion, sliced

1 t. sesame seeds


In a small bowl, stir water, soy sauce, lemon juice, cornstarch and sesame oil; set aside. Heat skillet over medium-high heat.  Add olive oil; tilt pan to coat evenly.  Add chicken and stir fry 2 to 3 minutes.  Add peppers and onions.  Stir fry 3 to 5 minutes or until chicken is no longer pink in the center and vegetables are crisp tender.  Stir soy sauce mixture into chicken mixture; heat to boiling.  Cook and stir until sauce is thickened.  Sprinkle with sesame seeds.

Makes 4 servings.
