Simple Onion Soup

1 T. margarine

3 c. onion, yellow, thinly sliced

6 c. beef broth, low sodium

1/2 t. black pepper

4 T. Parmesan cheese

6 slices of bread, whole wheat, toasted (optional)


Heat margarine in large saucepan over medium-high heat.  Add onions and saute' for 2 minutes.  Cover and cook until translucent.  Stir in broth and pepper.  Bring to a boil and simmer for 10 minutes.  Serve and top with cheese.  *Optional: Transfer the soup to an oven safe dish.  Place bread in the soup.  Top with cheese and broil until the cheese is melted.

Makes 6-1 c. servings.
