Spinach Lentil Saute'

1/2 c. lentils, sorted and rinsed

1/2 c. long grain rice

1 qt. water

1/2 c. onion, diced

1 t. garlic, chopped

1/2 T. olive oil

8 oz mushrooms, washed and sliced

1/2 pkg. frozen spinach, thawed, drained (10 oz)

1 t. salt

1/8 t. black pepper

dash cayenne pepper

1/2 c. swiss cheese, shredded


Bring water to boil; add lentils and rice.  Simmer until lentils are tender; drain and set aside.  Saute' onion and garlic in oil until softened; about 3-4 minutes;.  Stir in mushrooms, spinach, salt, pepper and cayenne.  Saute' mixture until mushrooms are almost cooked through.  STir in reserved lentils and rice; heat through.  Pour into serving dish and sprinkle with cheese.

Makes 4-1 c. servings.
