1/2 c. cream cheese, reduced fat
1/4 t. chives, chopped
1/4 t. basil
2 whole wheat tortillas
1 tomato, seeded, sliced into thin rounds
6 spinach leaves
Place the cream cheese in a small bowl. Mash the basil and chives into the cream cheese with the back of the spoon. Spread a little cream cheese on each of the spinach leaves, then spread the rest in a thin layer onto the tortillas. Place three tomato slices in a row down the middle. Top with the spinach leaves, cream creese facing up. Roll up each tortilla tightly into a log. Pinch the seams shut. Use a knife to slowly slice each log crosswise into 6 pinwheels.
Makes 2 servings (6 pinwheels each).
