1 T. vegetable oil
1 lb. chicken, cut in strips
1 can pineapple chunks (20 oz)
2 T. brown sugar
1/4 c. ketchup
2 T. white vinegar
1/2 c. water, cold
1 T. cornstarch
1 bell pepper, red, diced
2 onions, green, sliced
Heat oil in large skillet add chicken. When almost cooked, add pineapple (with juice), brown sugar, ketchup and vinegar. Stir and bring to a boil. Mix cornstarch and water in small bowl. Add cornstarch/water, mix to skillet. Stir until thickened, add green onion and red bell pepper.
Makes 6 servings.
