Sweet Potato Custard

1 c. sweet potato, cooked, mashed

2 bananas, medium, mashed

1 c. evaporated skim milk

1 egg

3 T. brown sugar, packed

1/4 c. raisins

1 t. cinnamon, ground

cooking spray


Stir together sweet potato and banana in a medium bowl.  Add milk and egg; mix well. Add brown sugar, raisins and cinnamon to mixture; blend thoroughly.  Spray 1-quart casserole with nonstick cooking spray.  Transfer sweet potato mixture to casserole dish.  Bake in preheated 325 degree oven for 40-45 minutes or until knife inserted in center comes out clean.

Makes 6-1/2 c. servings.
