Baked Lemon Chicken

3 lb. chicken breasts, skinless

¼ tsp. pepper

1 tsp. garlic powder

1 tsp. dried thyme

3 c. onions, thinly sliced

1 ½ c. reduced sodium chicken broth

¼ c. lemon juice

1 lemon, sliced into 10 slices, seeds removed

 

Preheat oven to 400° F.  Combine pepper, garlic and thyme.  Lay chicken pieces into a 11x 13 baking dish.  Sprinkle seasonings over chicken.  Combine onions, broth, and lemon juice in a saucepan.  Heat to a boil.  Pour hot lemon mixture around chicken.  Top each chicken piece with a slice of lemon.  Bake for 30 minutes, or until golden brown and juices are clear.
