Baked Meatballs

Cooking spray 

2 lbs. ground beef, extra lean

½ c. skim milk

½ t. pepper

½ t. garlic powder

¾ c. cracker crumbs

2 eggs

2 t. onion powder


Preheat oven to 400 degrees.  Spray baking sheet lightly with cooking spray. Mix all ingredients together in bowl until blended, using a large serving spoon.  (Don't overwork; it will become tough.) Shape beef mixture into 1-inch meatballs; place on the sprayed baking sheet.  Makes 24 meatballs. Bake until the meat is thoroughly cooked, about 15 to 18 minutes.  About 5 minutes before they are finished, turn them over in the pan and finish cooking. 


Makes 8 servings.

Nutrition Information (3 meatballs per serving): 180 calories, 7 g fat, 105 mg cholesterol, 140 mg sodium, 5 g carbohydrates, 0 g fiber, and 24 g protein.
