½ T. trans-fat free margarine
1 16-oz. pkg small baby carrots, trimmed and peeled
1 t. honey
1 T. green onion tops
1 c. unsweetened apple juice
Melt margarine in large nonstick skillet over medium high heat. Add carrots and saute until carrots
begin to brown slightly, about 8 minutes. Add apple juice and honey and bring
to a boil. Reduce the heat and
simmer until carrots are tender and liquid is reduced to glaze, stirring
occasionally, about 15 minutes. Transfer to serving bowl and cover with green
onion tops and serve.
Makes 4 1-cup servings.
