2 T. olive oil
2 c. onions, chopped
3 garlic cloves, chopped
1 1/4 c. zucchini, sliced
1 T. oregano, dried
1 T. basil, dried
1 can tomato sauce, no salt added (8 oz.)
1 can tomato paste, no salt added (6 oz.)
2 tomatoes, medium, chopped
1 c. water
In a medium skillet, heat oil. Saute' onions, garlic and zucchini in oil for 5 minutes. Add remaining ingredients and simmer covered for 45 minutes. Serve over spaghetti.
Makes 6-3/4 c. servings.
