Vinaigrette Pasta Salad

4 oz. fettuccine noodles

1 1/2 T. vegetable oil

1 1/2 T. white wine vinegar

1/2 t. parsley

1/4 t. salt

1/8 t. oregano, dried

dash of hot sauce

1 cucumber, small, chopped

4 mushrooms

2 T. onion, green, chopped

1 tomato, small, seeded


Cook pasta according to direction, omitting salt.  Drain and rinse with cold water; drain again.  Place pasta in a salad bowl.  For dressing, combine oil, vinegar, parsley, salt, oregano and hot sauce in a bowl; whisk until well blended.  Add cucumber, mushrooms, green onions and tomato to pasta; toss lightly to mix.  Pour dressing over ingredients.

Makes 4-1 c. servings.
