1 lb pork, cut into strips
1 c. broccoli
1 c. red bell pepper, chopped
½ c. carrots, cut into strips
½ c. pea pods
¼ c. light fat free Italian salad dressing
1 T. low sodium soy sauce
1 8 oz. bag of salad greens
1 1/3 cup cooked brown rice
Heat oil in large nonstick skillet on medium-high heat. Add pork, cook and stir 5 minutes. Add vegetables; cook and stir 2 minutes
or until vegetables are cooked crisp tender and pork is cooked through. Mix dressing and soy sauce in separate
container. Place salad greens in
large salad bowl. Add pork mixture
and rice; mix lightly with dressing.
Makes 9 1-cup servings.
