Simple Italian Vegetables

1 zucchini, medium, sliced

1 squash, medium, sliced

1 c. mushrooms, sliced thick

1 c. tomato, cut into cubes

1/2 c. onion, cut into cubes

1/4 c. Parmesan cheese

1 T. olive oil

1/2 t. basil

1/2 t. oregano

1/2 t. pepper


Preheat oven to 400F. Mix all ingredients in a large bowl. Cut 4 15-inch pieces of parchment paper: fold each parchment sheet in half. Unfold. Divide the vegetable mixture into 4 servings and place ingredients on one half of the sheet near the crease.  Fold the other half over enclosing the ingredients.  Make small folds starting at one end of the packet and continue to fold until the edges are sealed together. Twist the last fold several times to make a tight seal. Place on a baking sheet and bake for 20 minutes or until the paper is puffed and slightly browned.

Makes 4 servings.
