1 lb. Ground
beef, lean
½ c. green
onions, sliced
2 t. Dark sesame oil
3 T. Ketchup
3 c. fresh spinach, coarsely chopped
2 Garlic cloves, minced
1 red bell pepper, medium, cut into thin strips
3 T. Soy
sauce, less sodium, divided
2 T. Water
2 c. brown rice, cooked
Toss beef with sesame oil, garlic and 2 T. of soy sauce. Heat large nonstick skillet over medium-high heat until hot. Add beef and cook until done. Remove from skillet and drain. In same skillet, add bell pepper strips, cook for 2 to 3 minutes or until peppers are crisp-tender. Add spinach and green onions; cook until spinach is just wilted. Stir in ketchup, remaining soy sauce, and water; heat through. Serve over rice.
