Ingredients

  • Cooking spray
  • ⅔ c Instant potatoes
  • 2 c Bakery mix*, low fat
  • 3 T Farina
  • 1 pkg Yeast, rapid rise, ¼ oz pkg
  • ¼ t Salt
  • 1 T Sugar
  • 4 T Margarine, melted
  • 1 c Water, hot (125°F-130°F)
  • 1 c Flour for kneading

*Bakery mix (baking mix) is a premixed baking product that includes flour, baking powder and other ingredients.

Directions

  1. PREHEAT oven to 375°F.
  2. SPRAY a 12–cup muffin tin with cooking spray.
  3. In a large bowl ADD instant potatoes, bakery mix, farina, yeast, salt and sugar. MIX well.
  4. ADD margarine and water. MIX well. Dough may feel wet.
  5. PLACE dough on a well floured surface and KNEAD for 3-5 minutes or until smooth/elastic. SHAPE into a loaf.
  6. DIVIDE dough into 12 pieces and PLACE in muffin tin. BAKE 15-18 minutes or until golden brown.
