Ingredients

  • Cooking spray
  • 1 ¼ c Flour
  • 1 c Cornmeal
  • ⅓ c Sugar substitute
  • 1 T Baking powder
  • ¼ t Salt
  • 2 Egg whites
  • ¼ c Applesauce
  • 1 c Milk, skim
  • 1 can Corn, drained and rinsed, (15 oz can)
  • 1 Taco seasoning packet, no salt added

Directions

  1. PREHEAT oven to 400˚F. SPRAY a 9x13 inch pan with cooking spray.
  2. In a large bowl MIX flour, cornmeal, sugar substitute, baking powder, salt, egg whites, applesauce, milk, corn and taco seasoning.
  3. POUR batter into pan and BAKE for 15-20 minutes.
  4. CUT into 24 servings.
