Ingredients

  • Cooking spray
  • 1 c Cottage cheese, low-fat
  • 4 Eggs
  • 1 c Flour
  • 1 t Baking powder
  • ¼ t Salt
  • ½ t Pepper
  • 1½ c Canadian bacon, chopped, 6 oz
  • ½ c Pepper jack cheese, shredded
  • ¼ c Green onion, chopped

Directions

  1. WASH hands with soap and water.
  2. PREHEAT oven to 400 F.
  3. SPRAY a 12-cup muffin tin with cooking spray.
  4. In a large bowl, MIX cottage cheese, eggs, flour, baking powder, salt and pepper.
  5. ADD Canadian bacon, cheese and onion. MIX well.
  6. POUR ¼ c of mixture into each muffin tin. DIVIDE any remaining mixture between the 12 cups.
  7. BAKE for 10-15 minutes, until SET.
