Ingredients

  • Cooking spray
  • 1.25 lb Chicken breast, whole or cut into bite sized pieces
  • 1 ½ t Lemon zest
  • 1 T Lemon juice
  • 1 can Cream of chicken soup, 50% less sodium, low-fat (10 ¾ oz)
  • 1 t Rosemary, dried
  • 1 t Thyme, dried
  • 3 Garlic cloves, minced
  • ½ c Water
  • ¼ c Chicken broth, 98% fat free
  • 1 c Peas, frozen, thawed
  • 2 c Rice, brown, cooked
  • 1 Lemon slice, optional

Directions

  1. COOK chicken in a skillet sprayed with cooking spray on medium-high heat.
  2. In a medium bowl, MIX lemon zest, lemon juice, soup, rosemary, thyme, garlic, water and broth.
  3. ADD broth mixture to skillet when chicken is cooked through.
  4. HEAT through then ADD peas and rice.
  5. HEAT and GARNISH with lemon slices if desired.
