Ingredients

  • 3 Chicken breasts, 5-8 oz each
  • ¼ c Margarine, softened
  • 3¾ t Rosemary, dried, minced, divided
  • 2 Garlic cloves, minced
  • 1 Lemon, zested
  • ¼ c Lemon juice,divided
  • Pepper to taste

Directions

  1. SLICE each chicken breasts in half long ways to make 6 portions.
  2. RESERVE ¾ t of rosemary and 2 T of lemon juice and SET aside.
  3. In a bowl, BLEND together the margarine, remaining rosemary, garlic, lemon zest and remaining lemon juice.
  4. RUB chicken breasts with the marinade mixture on both sides.
  5. In a large skillet on medium-high heat, GRILL breasts for 4 minutes on each side.
  6. REMOVE from skillet and GARNISH with reserved rosemary and lemon juice.
