Ingredients

  • 2/3 c Water
  • 3 T Soy sauce, lower sodium
  • 2 t Lemon juice
  • 3 T Cornstarch
  • 1 t Sesame oil
  • 2 t Olive oil
  • 4 Chicken breast, bone-less, skinless, cut into strips
  • 2 Bell pepper, sliced
  • 1 Onion, sliced
  • 1 t Sesame seeds

Directions

  1. In a small bowl, STIR water, soy sauce, lemon juice, cornstarch and sesame oil; SET aside.
  2. HEAT skillet over medium-high heat. ADD olive oil; TILT pan to coat evenly. ADD chicken and stir-fry 2 to 3 minutes. ADD peppers and onions. STIR-FRY 3 to 5 minutes or until chicken is no longer pink in the center and vegetables are crisp-tender.
  3. STIR soy sauce mixture into chicken mixture; HEAT to boiling. COOK and STIR until sauce is thickened. SPRINKLE with sesame seeds.
