Ingredients

  • ½ T Olive oil
  • 1 lb Pork loin, lean, boneless, cut into bite sized pieces
  • ½ c White cooking wine
  • ¾ c Onion, chopped
  • 2 Garlic cloves, chopped
  • 2 c Red potatoes, diced
  • 1 c Carrots, thinly sliced
  • ¼ t Salt
  • ¼ t Cumin
  • ½ t Paprika
  • ½ t Black pepper
  • 2 ½ c Water
  • 1 t Poultry seasoning
  • ½ can Diced tomatoes (15 oz)
  • 1 t Celery flakes
  • ½ c Barley, uncooked
  • ½ c Cranberries, dried

Directions

  1. In a 6 qt. pot, HEAT oil over medium-high heat.
  2. ADD pork and brown thoroughly.
  3. ADD cooking wine, onion, garlic cloves, potatoes, carrots, salt, cumin, paprika and pepper. TURN down heat to medium/low and COOK for 4 minutes.
  4. ADD water, poultry seasoning, diced tomatoes, celery flakes and barley. BRING to a BOIL.
  5. REDUCE heat to low. COVER and COOK for 15-20 minutes.
  6. STIR in cranberries. COOK for 10-15 minutes longer. SERVE.
