Ingredients

  • 4 c Sweet potatoes, cubed
  • 1 can Cannellini beans, drained and rinsed (15 oz)
  • 1½ c Ham, cubed
  • ½ c Onion, diced
  • ½ t Thyme, dried
  • ¼ t Black pepper
  • 32 oz Chicken broth, reduced sodium
  • ½ c Evaporated milk, fat free
  • 1 T Cornstarch

Directions

  1. PLACE sweet potatoes, beans, ham, onion, spices and chicken broth in a large stockpot.
  2. BOIL for 10 minutes. Reduce heat to a SIMMER for 10 minutes.
  3. In a small bowl MIX evaporated milk and cornstarch. ADD milk mixture to the soup.
  4. Bring to a BOIL for 1-2 minutes. STIR constantly.
