Ingredients

  • 1 T Margarine
  • 3 c Onion, yellow, thinly sliced
  • 6 c Beef broth, lower sodium
  • ½ t Black pepper
  • 4 T Parmesan cheese
  • 6 Bread, whole wheat, sliced, toasted (optional)

Directions

  1. HEAT margarine in large saucepan over medium-high heat.
  2. ADD onions and SAUTÉ until caramelized (light golden brown).
  3. STIR in broth and pepper. Bring to a BOIL and SIMMER for 10 minutes.
  4. SERVE and TOP with cheese.

*Optional: TRANSFER the soup to an oven safe dish. PLACE bread in the soup, TOP with cheese and BROIL until the cheese is melted.
